Mature women have been around the block and they can spot insincerity a mile away. You really need to avoid bland, uncreative statements like "Wow, you're beautiful!". She will smile and thank you, but inside she may be thinking "He's nice, well, time to keep shopping". You want her to be thinking "Wow, here's an insightful guy!".
